Jen’s Picken Pies

Also known as Chicken Pillows…

These are best as an appetizer but they can be served as an entree with a dinner salad and gravy. It is very easy, requires very little clean up and people go crazy for them!

Ingredients:

  • 8 oz cream cheese, softened
  • 1 12.5 can of chicken (or you can use homemade shredded chicken)
  • 2 cans Pillsbury crescent rolls
  • 2 stalks celery, chopped fine
  • 1 tablespoon of olive oil
  • 1 onion, chopped fine
  • Italian Breadcrumbs (or any other flavor)
  • 3 tablespoons of butter
  • favorite seasoning mix (I use Ms. Dash Table Blend or Slap Your Mama)
  • salt n peppa

First, preheat your oven to 350 degrees. Get out a medium sized skillet and set it on the stove. You will use it later. Then, get out a medium sized bowl and dump the softened cream cheese into the bottom. The best way to soften it is to let it sit at room temp. for about 15 minutes or more. Smush it up with a fork, then add the drained chicken. Mix well and set aside.

Go to your skillet and turn your flame on low to low/medium heat. As it heats, add the olive oil, then onions and stir. After about 1 min, add the celery. Saute over low to low medium heat until the onion starts to become translucent and the celery loses its hardness. Once you can cut it in half easily with your spatula, it is near finished. Stir a few more times, then cut off the heat. Add this mixture to the cream cheese in the bowl and mix well.

Add salt and pepper to taste and a few shakes of Ms. Dash (or your seasoning of choice).

Set aside. Take out a small bowl and put the butter in it. Melt carefully in the microwave, checking every 15 seconds. Do not let the butter burn in the microwave! While it melts, take out another small bowl and pour about a half a cup of Italian breadcrumbs in it. Butter should be melted, take it out and set the bowls next to each other.

Pull out a baking sheet and either cover it with foil and spray with Pam, or just spray it with Pam. Take out the crescent rolls and begin separating them into individual rolls. Take a regular dinner spoon and fill it with a scoop of cream cheese mixture. Take the spoonful (not heaping) and add it to the large (bottom) part of the crescent roll, then roll up the dough around it. Continue to do this until you run out of crescent rolls.

Then, take each individual roll, dip it into the melted butter and then coat it lightly with the breadcrumbs. (You can roll it in the breadcrumbs to do this.) Add to the baking sheet. Once you’ve finished this, take your full baking sheet and put in the oven on a middle rack. Bake for 16-18 mins at 350 and check to make sure they are just lightly crispy and edges slighty browned before you pull them out.

Let cool on the sheet for 1-2 mins…then serve!
